  • sugar - 2 c
  • vanilla - 1 tsp
  • coconut
  • buttermilk - 3/4 c
  • powdered sugar - 2 Tbsp
  • stick butter, melted - 1 item
  • eggs, well beaten - 5 item
  • butter, melted - 6 Tbsp
  • unbaked pie shells or use Powdered Sugar Crust - 2 item
  • Pour into pie shells

How to make buttermilk coconut pie:

Combine sugar with eggs; stir in buttermilk, butter, vanilla and coconut. Pour into pie shells. Bake at 350° for 30 minutes or until golden and knife inserted in center comes out clean.

Note: This recipe can be halved using 2 large eggs and half the other ingredients.Powdered Sugar Crust:1 c. flour2 Tbsp. powdered sugar1 stick butter, melted Combine flour and powdered sugar; add melted butter. Blend well with for and press pastry into bottom and sides of a 9-inch pie pan. Bake at 250° until golden brown. Cool thoroughly if using for recipes calling for baked crust. Otherwise, bake with filling as recipe indicates.
