Ingredients/Components
- sugar - 3/4 c
- egg yolks - 6 item
- egg whites - 6 item
- lemon juice - 3/4 c
- Knox gelatine - 1 pkg
- rind of 1 lemon
- medium angel food cake - 1 item
How to make lemon icebox cake:
Thicken egg yolks, lemon juice and sugar in top of double boiler. Dissolve 1 package of Knox gelatine in 1/2 cup water. Add to hot lemon mixture. Beat egg whites until stiff. Add 3/4 cup sugar to egg whites. Fold egg whites into warm lemon mixture. Tear angel food cake into bite-size. Alternate layers of lemon mixture and angel food cake in a spring mold. Set in refrigerator overnight. Ice with Cool Whip or serve with Cool Whip.Recipe categories: Desserts, Cakes, Spring.
