Lemon icebox cake



  • sugar - 3/4 c
  • eggs - 6 item
  • gelatin - 1 pkg
  • whipping cream - 1 pt
  • lemon juice - 5 Tbsp
  • rind of 1 1/2 lemons
  • Ladyfingers - 1 item

How to make lemon icebox cake:

Dissolve gelatin in cold water. Beat egg yolks lightly. Add sugar, lemon juice and rind. Cook in double boiler until thick, about 15 minutes. Remove from stove and add gelatin. Beat the egg whites very stiff. Add to cooked mixture. Beat all together. Line spring-form pan with ladyfingers and also the sides. Pour in mixture. Set overnight in refrigerator. Top with whipped cream. Can also make it with chocolate pudding instead of lemon.
