Ingredients/Components

  • salt - 2 Tbsp
  • pepper - 1 tsp
  • oregano - 3 Tbsp
  • olive oil - 1/4 c
  • concentrated lemon juice - 1 c
  • whole medium chickens, quartered - 2 item
  • cloves garlic, mashed fine - 6 item

How to make lemon chicken:

Place chicken in baking dish. Season chicken with salt, pepper and oregano mixture. Mix together lemon juice, garlic and olive oil. Pour on chicken. Bake, uncovered, at 375° for 1 1/2 hours. Quartered onions and potatoes can be also baked with chicken.
