- boiling water - 2 c
- cornmeal - 3/4 c
- oil for frying - 1 item
How to make hot water cornbread:
Place cornmeal in a large bowl. Pour in boiling water gradually, stirring until no dry cornmeal is visible. Let stand until cool. Shape into balls; flatten slightly. Fry in 1/4 inches hot oil in a cast-iron skillet until brown on both sides, turning once. Serve with turnip greens or other vegetables. May add additional boiling water for thinner batter consistency to drop from spoon into hot oil. Yield: 6 servings.Recipe categories: Breads, Quick breads, Flat Shaped breads.
