Hearty french onion soup
Ingredients/Components
- large onions, sliced - 3 item
- clove garlic, minced - 1 item
- butter or margarine - 1/4 c
- browned Beef Stock - 4 c
- slices toasted French bread - 4 item
- grated Parmesan cheese - 1 item
- pepper - 1/4 tsp
- sliced Swiss or Mozzarella cheese - 4 oz
- each cans condensed beef broth bouillon
- water
- sliced onion - 1/4 c
- carrots, sliced - 1/4 c
- sprigs parsley - 2 item
- small bay leaf - 1 item
- thyme - 1/8 tsp
How to make hearty french onion soup:
Beef Stock:2 (10 1/2 oz. each) cans condensed beef broth (bouillon)1 1/2 c. water1/4 c. sliced onion1/4 c. carrots, sliced2 sprigs parsley1 small bay leaf1/8 tsp. thyme Beef Stock: Heat all ingredients to boiling. Reduce heat. Cover and simmer 1 hour. Strain. Discard seasonings.In large covered saucepan, cook onions and garlic in butter over low heat about 20 minutes, stirring occasionally, until tender. Add Beef Stock and pepper. Bring to boil. Cover and simmer for 15 minutes.
Toast bread. Top each with sliced cheese, then sprinkle with Parmesan. Broil 2 to 3 minutes or until cheese melts. Ladle soup into 4 bowls. Place toasted bread in each bowl. Enjoy!
