Chicken tetrazzini
Ingredients/Components
- butter or margarine - 1/3 c
- salt - 1 tsp
- flour - 1/3 c
- water - 1 c
- pepper - 1/4 tsp
- grated Parmesan cheese - 1/2 c
- chopped onion - 1 item
- minced parsley - 2 Tbsp
- chicken, cut up - 1 (2
- white cooking wine - 1/2 c
- thyme - 1/4 tsp
- half and half cream - 1/2 c
- can whole mushrooms - 1 oz
- spaghetti 2-inch pieces, cooked - 8 oz
How to make chicken tetrazzini:
Combine first 8 ingredients and put in crock-pot. Cook on low for 8 to 10 hours, until chicken is well done. Remove chicken bones; cut chicken into chunks. Strain broth into bowl. (Remainder of recipe may be cooked in crock-pot or on stove top, depending on available time.)Add butter to crock-pot (turn to high heat). Melt butter; stir in flour. Gradually add broth, then cream. Cook on high until bubbly; add chicken, mushrooms and cooked spaghetti. Cover; cook on high for 15 minutes. Sprinkle Parmesan cheese (freshly grated is best) on top. Serves 8.
