Hearty bean soup
Ingredients/Components
- sugar - 1/2 tsp
- salt - 1 tsp
- water - 1 c
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- chopped onion - 1/4 c
- parsley flakes - 2 tsp
- chopped green peppers - 1/4 c
- red pepper - 1/8 tsp
- chopped carrot - 1/2 c
- 303 can tomatoes
- 300 cans navy beans
- slices bacon, cut in 1/2 - 2 item
How to make hearty bean soup:
Cook bacon in a large, heavy saucepan until crisp. Drain and set aside. Leave a small amount of drippings in pan (about 1 tablespoon). Add green pepper, onion, carrot and garlic. Cook 5 minutes. Add tomatoes which have been mashed or cut into small pieces. Stir in navy beans along with salt, pepper and sugar. Simmer 30 minutes to an hour. Add crumbled bacon and parsley flakes. Cook 5 minutes more. This is delicious when made the day before and reheated slowly at serving time.Recipe categories: Soups & stews, Beans, Onions.
