Hearty bean soup
Ingredients/Components
- garlic powder - 1 clove
- medium onion, chopped - 1 item
- ham - 1 lb
- can tomatoes, chopped - 1 item
- dried beans - 2 c
- can tomatoes with green chilies I use Ro-Tel - 1 item
How to make hearty bean soup:
Wash dried beans and cover with warm water. Let soak overnight. Pour off water. In large Dutch oven or stock pot, put all ingredients and about 1 quart of water. Bring to a boil, turn down heat and let simmer for two or three hours or until beans are tender. Salt and pepper to taste. Add water occasionally as needed. Serve with hot cornbread or crackers.You may use any dried beans that you like. There is a package of dried bean soup mix that you may use. It is a good way to use small amounts of dried beans.
