Ingredients/Components

  • large onion, diced - 1 item
  • tomatoes - 1 qt
  • mixed beans dry - 1 pkg
  • ham bits - 1/2 pkg

How to make hearty bean soup:

Sort and wash beans. Soak overnight. Wash again and put beans in large Dutch oven and cover with water. Add everything else. Bring to a boil, reduce heat and simmer slowly until tender. Add more water as they cook, if you need to. Great served with slaw, cornbread and homemade applesauce.
