Hearty bean and barley soup
Ingredients/Components
- salt - 1 1
- water - 2 qt
- pepper - 1 tsp
- Worcestershire sauce - 1/4 c
- hot sauce - 1/2 tsp
- cloves garlic, chopped - 8 item
- large onion, chopped - 1 item
- carrots, sliced - 6 item
- ham hock - 1 item
- ground beef, cooked and drained - 1 lb
- dried Great Northern beans - 2 lb
- cans consomme - 4 1/2
- coarsely chopped ham - 2 c
- fine barley - 1 c
- fresh jalapeno peppers, split and seeded - 2 item
How to make hearty bean and barley soup:
Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans. Let soak overnight. Drain. Add 2 quarts water; bring to a boil. Add remaining ingredients; cover, reduce heat and simmer 2 1/2 hours, stirring occasionally. Yields 5 1/2 quarts. Freezes well.Recipe categories: Soups & stews, Beans, Stew.
