Enchilada casserole
Ingredients/Components
- salt - 1 tsp
- egg - 1 item
- garlic powder - 1/4 tsp
- pepper - 1/8 tsp
- onion, chopped - 1 item
- can tomatoes - 1 item
- corn tortillas - 8 item
- small carton cottage cheese - 1 item
- can enchilada sauce - 1 oz
- meat - 2 lb
- can sliced olives and liquid - 1 item
- block each: Cheddar cheese and Jack cheese - 1 item
How to make enchilada casserole:
Brown meat and onion in pan. Put tomatoes, enchilada sauce, olives, salt and pepper all in one pot. Add meat and onion; bring to a boil. Reduce heat and simmer 20 minutes.Beat cottage cheese and egg together. Shred cheese. Cut tortillas in half.
Put 1/3 of sauce in bottom of pan, sprinkle 1/2 of cheese on top of sauce, add 1/2 of cottage cheese and 8 halves of tortillas. Repeat. Bake, uncovered, for 20 minutes at 350° until cheese melts.
