  • butter or margarine
  • chicken broth - 1 c
  • juice of 1 lemon
  • boneless, skinless chicken breasts - 1 lb
  • hot, cooked rice - 1 item
  • flour, seasoned with salt and pepper to taste - 1/2 c
  • lemon slices and parsley for garnish optional - 1 item

How to make lemon chicken:

Pound chicken breasts to about 1/2-inch thick, using a meat mallet or the edge of a saucer. Coat flattened chicken breasts with flour, seasoned with salt and pepper to taste. Melt butter or margarine in a large skillet over medium-high heat. Add chicken breasts and brown quickly on both sides. Add lemon juice and chicken broth and bring to a boil, gently stirring the bottom of the pan to incorporate browned bits.

Reduce heat to medium-low and cook a few minutes, until sauce is reduced to desired thickness or, if it seems too thick, add more chicken broth. Serve over hot, cooked rice, garnished with lemon slices and parsley, if desired. Yields 2 to 4 servings.
