Ingredients/Components

  • eggs - 8 item
  • all-purpose flour - 4 c
  • pepper to taste - 1 item
  • Cheddar cheese sharp
  • potatoes, peeled and cut up in chunks - 8 item
  • small bunch chives, chopped optional - 1 item

How to make pierogies:

You will need a 3 or 4-inch round cookie cutter.

Boil potatoes until tender enough to mash; drain and mash. Add cheese and continue to mash until evenly distributed. Meanwhile, put a large pot (8-quart) of water with salt (tablespoon) in it.

Mix flour and eggs together until noodle dough is formed, not too sticky. On well floured surface, knead until smooth and elastic. Roll out until 1/8-inch thickness. Cut 3-inch circles out. Place 1 teaspoon of cheese and potato mixture in center. With water, wet edges of noodle. Press edges to seal; pinch tightly. Boil until done as a pasta. Drain. Melt butter in frypan and brown. Serve hot.
