- flour - 1 item
- water - 1/4 c
- Parmesan cheese - 3 Tbsp
- Batter:3 eggs, beaten
- eggplant, sliced thin and peeled - 1 item
- parsley, garlic salt and pepper - 1 item
How to make eggplant parmesan:
Batter:3 eggs, beaten parsley, garlic salt and pepper1/4 c. water3 Tbsp. Parmesan cheese Slice eggplant thin and peel. Coat with flour and dip in batter.Fry eggplant in oil until brown and drain well on paper towels. Layer in casserole dish with spaghetti sauce. Top with Parmesan cheese. Cover with foil and bake 30 minutes in 350° oven.
