  • flour - 1/3 c
  • eggs, well beaten - 2 item
  • salt and pepper - 1 item
  • onion - 1/3 c
  • rice, cooked
  • sharp cheese - 1 c
  • mashed eggplant - 2 c

How to make eggplant fritters:

Combine all ingredients. Heat 1/2 cup oil in large skillet. Drop mixture by tablespoon and fry until golden brown. Drain (serve hot). These can be frozen after frying and reheated in a 350° oven for 10 minutes.
