Ingredients/Components
- flour - 1/3 c
- eggs, well beaten - 2 item
- salt and pepper - 1 item
- onion - 1/3 c
- rice, cooked
- sharp cheese - 1 c
- mashed eggplant - 2 c
How to make eggplant fritters:
Combine all ingredients. Heat 1/2 cup oil in large skillet. Drop mixture by tablespoon and fry until golden brown. Drain (serve hot). These can be frozen after frying and reheated in a 350° oven for 10 minutes.Recipe categories: Squash, Side dish, Vegetables.
