Eggplant dressing
Ingredients/Components
- margarine - 1 item
- egg, beaten - 1 item
- bread crumbs - 2 c
- salt and pepper to taste - 1 item
- onion, chopped - 1 item
- cooked rice - 1/2 c
- ground round
- eggplants - 2 item
- Puritan oil - 3 Tbsp
- few sprinkles of parsley flakes - 1 item
- celery, chopped include some leaves - 1/2 c
- slices bread, soaked with water - 2 item
- grated Romano cheese for topping - 1 item
How to make eggplant dressing:
Peel and quarter eggplants. Boil in salted water until very tender (15 to 20 minutes). Mash with fork and set aside. Saute onion, celery and parsley flakes in oil until tender. Set aside.
