Cream of potato soup
Ingredients/Components
- milk - 2 c
- salt
- light cream or evaporated milk - 2 c
- parsley - 1 item
- fat - 6 slices
- white pepper - 1/4 tsp
- sliced carrots - 1/2 c
- sliced celery - 1 c
- Cheddar cheese, shredded - 1 item
- large potatoes, pared and sliced - 5 item
How to make cream of potato soup:
Cook potatoes and carrots in boiling water until tender; drain. Saute onion and celery in the 2 tablespoons bacon fat. Combine all ingredients, except cheese and parsley. Simmer 30 minutes.
