Ingredients/Components

  • sugar - 2 c
  • vanilla - 1 tsp
  • salt - 1 item
  • butter
  • egg yolks - 8 item
  • confectioners sugar - 1 pkg
  • baking powder - 1 tsp
  • egg whites - 8 item
  • lemon juice - 2 Tbsp
  • sifted all-purpose flour - 3 c
  • butter or 4 sticks margarine - 2 c

How to make pound cake:

Glaze:1 Tbsp. butter1 pkg. confectioners sugar1/3 c. lemon juice Preheat oven to 350°; grease and flour 10-inch tube pan. Separate eggs; let whites warm to room temperature. Sift flour on waxed paper with baking powder and 1/4 teaspoon of salt. With mixer at high speed, beat egg whites with 1/4 teaspoon of salt until foamy. Beat in 1 cup sugar, 1/4 cup at a time. Beat until whites peaks (set aside).

In large bowl on high speed, beat butter with remaining cup of sugar until fluffy. Beat in yolks until fluffy. On high speed, beat in lemon juice and 2 tablespoons of water until smooth. Divide flour mixture into thirds. At low speed, blend in 1/3 at a time, just until combined. Add vanilla. Takes about 1 minute. On low speed, blend in egg whites, half at a time, until blended. Be sure not to overmix. Turn batter into pan. Bake in oven for 60 minutes until done. Drizzle glaze over cake.
