Cream of cabbage soup
Ingredients/Components
- salt - 1 tsp
- flour - 2 Tbsp
- butter - 2 Tbsp
- boiling water - 2 c
- pepper - 1/8 tsp
- dash of cayenne - 1 item
- onion, minced - 1 Tbsp
- small head cabbage - 1 item
- milk, scalded - 2 c
How to make cream of cabbage soup:
Cut cabbage very fine. Add boiling water and cook until soft, then press through a sieve and return to liquor. Melt butter. Add onion and simmer for 3 minutes. Blend in flour, salt, pepper and cayenne. Add milk and cabbage mixture gradually, stirring constantly. Strain.
