Cream of cabbage soup



  • salt - 1 tsp
  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • boiling water - 2 c
  • pepper - 1/8 tsp
  • dash of cayenne - 1 item
  • onion, minced - 1 Tbsp
  • small head cabbage - 1 item
  • milk, scalded - 2 c

How to make cream of cabbage soup:

Cut cabbage very fine. Add boiling water and cook until soft, then press through a sieve and return to liquor. Melt butter. Add onion and simmer for 3 minutes. Blend in flour, salt, pepper and cayenne. Add milk and cabbage mixture gradually, stirring constantly. Strain. Reheat and serve hot garnished with cheese balls or puffs.
