  • sugar - 3/4 c
  • cinnamon - 1/4 tsp
  • salt - 3/4 tsp
  • baking powder
  • baking soda - 1/2 tsp
  • vegetable oil - 1/4 c
  • large egg - 1 item
  • walnuts, chopped - 1/2 c
  • ground cloves - 1/4 tsp
  • orange juice - 3/4 c
  • whole wheat flour - 1 c
  • white flour - 1 c
  • grated rind of 1 orange
  • firm, fresh cranberries - 1 1

How to make cranberry bread:

Stir together the flour, sugar, baking powder, salt, baking soda and spices. Lightly beat together the orange rind, orange juice, egg and oil. Stir the wet ingredients into the dry ingredients. Coarsely chop the cranberries and add to the batter along with the chopped nuts.

Mix thoroughly and pour into a greased 9-inch loaf pan. Bake at 350° for 1 hour or until a toothpick comes out clean. Cool on rack and wrap tightly to store.
