Ingredients/Components
- butter or margarine - 1/4 c
- salt - 1/4 tsp
- butter or margarine, softened - 1/4 c
- chopped fresh parsley - 1/4 c
- thyme leaves - 1/4 tsp
- chopped green onion - 2 Tbsp
- crushed buttery crackers - 2/3 c
- minced fresh garlic - 1 Tbsp
- pinch of cracked pepper - 1 item
- Chicken:4 whole boneless chicken breasts, skinned
How to make country-style chicken kiev:
Chicken:4 whole boneless chicken breasts, skinned1/4 c. butter or margarine2/3 c. crushed buttery crackers1/4 c. chopped fresh parsley1/4 tsp. salt1/4 tsp. thyme leaves pinch of cracked pepper Filling: In medium bowl, stir together all ingredients. Divide into 4 equal portions. Freeze portions for 30 minutes. Heat oven to 350°. Flatten each chicken breast to about 1/4-inch thickness by pounding between sheets of waxed paper.Chicken: Place 1 portion of frozen filling onto each flattened breast. Roll and tuck in edges of chicken; secure with wooden picks. In 9-inch baking pan, melt butter in oven. Combine remaining ingredients. Dip rolled chicken in melted butter, then coat with crumb mixture. Place chicken in same pan. Sprinkle with remaining crumb mixture. Bake for 55 to 65 minutes, or until fork-tender. Remove wooden picks before serving. Makes 4 servings. Time: 2 hours.
