Lemon chicken
Ingredients/Components
- butter or margarine - 3 Tbsp
- salt - 1/2 tsp
- flour - 1 Tbsp
- chicken broth - 1 c
- chopped parsley - 1 item
- lemon slices - 4 item
- pinch of tarragon - 1 item
- whole broiler-fryer chicken breasts - 3 item
How to make lemon chicken:
Have butcher bone chicken breasts. Remove skin and cut meat into 10 or 12 strips. Melt butter in skillet over high heat. Add chicken. Sprinkle with flour, salt and tarragon. Cook, stirring constantly, for 5 minutes. Add chicken broth and lemon slices. Lower heat, cover and cook 3 minutes longer. Sprinkle with chopped parsley. Serve with hot, cooked rice.
