Country breakfast pie
Ingredients/Components
- milk - 1/4 c
- salt - 1/2 tsp
- pepper - 1/8 tsp
- 4 oz - 1 c
- slices bacon, cut in half - 4 item
- large eggs, lightly beaten - 6 item
- frozen hash brown potatoes with onions and green peppers * - 2 c
How to make country breakfast pie:
Place bacon in a 9-inch pie plate. Cover with paper towels. Microwave at High 3 to 4 minutes or until crisp. Remove bacon. Reserve drippings in pie plate. Crumble bacon and set aside.Spread potatoes in pie plate. Microwave, uncovered, at High 6 to 7 minutes. Combine eggs, milk, salt and pepper. Pour over potato mixture. Cover with heavy-duty plastic wrap. Microwave potato mixture at High 6 to 7 minutes, giving dish a quarter turn after 3 minutes. Sprinkle with Cheddar cheese and bacon. Cover and microwave at High 1 to 2 minutes. Let stand 5 minutes, then cut into wedges. Yields 6 servings.
*Two cups frozen hash brown potatoes, 1/4 cup chopped green pepper and 1/4 cup chopped onion may be substituted. (I use freshly grated potatoes.)
