Ingredients/Components

  • eggs - 4 item
  • milk - 2 c
  • butter - 1 Tbsp
  • diced onion - 1/2 c
  • diced green pepper - 1/2 c
  • shredded Swiss cheese - 1 c
  • broccoli - 24 oz
  • shredded cheddar cheese - 1 c
  • ham, diced
  • salt and pepper, to taste - 1 item
  • parboiled potatoes, sliced - 10 c

How to make country breakfast casserole:

Steam broccoli and set aside. Saut?© peppers and onions in butter and set aside. Beat eggs in small bowl. Add milk to eggs and mix well. Spread potato slices in 15 x 10 inch baking dish. Spread broccoli over potatoes and sprinkle evenly with ham. Layer pepper and onions over ham and season with salt and pepper. Spread cheeses over the top of the casserole. Pour egg and milk mixture over cheeses. Bake at 350 degrees for 45 to 60 minutes. Let stand 15 minutes before serving.
