Cornbread salad
Ingredients/Components
- pkg - 1 1/2
- milk - 1/3 c
- egg - 1 item
- mayonnaise - 1 c
- chopped sweet pickles - 1/2 c
- medium onion, chopped - 1 item
- green pepper, chopped - 1 item
- sweet pickle juice - 1/4 c
- medium tomatoes, peeled and quartered - 2 item
- or 8 slices bacon, cooked and crumbled - 7 item
How to make cornbread salad:
Combine cornbread mix, egg and milk. Stir well. Spoon into a greased 8-inch square pan. Bake in a 400° oven for 15 to 20 minutes. Cool and crumble. Set aside. Combine green pepper, onion, pickles and bacon. Toss gently. Combine mayonnaise and pickle juice. Stir well and set aside. Layer half each of cornbread, green pepper mixture and mayonnaise mixture in a large glass salad bowl. Repeat layers. Garnish with tomato wedges on top. Cover and chill 2 hours.
