Corn casserole
Ingredients/Components
- large onion, chopped - 1 item
- medium green peppers, chopped - 2 item
- margarine - 1/2 c
- all-purpose flour - 1/4 c
- frozen or canned corn - 2 c
- cooked long grain rice - 2 c
- can diced tomatoes with liquid - 1 1/2
- hard-cooked eggs, chopped - 4 item
- 10 oz
- Worcestershire sauce - 2 Tbsp
- hot pepper sauce - 2 3
- salt - 2 tsp
- pepper - 1 tsp
How to make corn casserole:
In a large skillet, saute onion and peppers in butter until tender. Stir in flour. Remove from the heat. Add remaining ingredients, except for 1/2 cup cheese. Pour into a greased 2 1/2-quart baking dish. Bake, uncovered, at 350° for 45 minutes. Top with remaining cheese. Let stand 5 minutes.
