Corn and tomato bisque
Ingredients/Components
- milk - 1 c
- butter - 1 Tbsp
- bay leaf - 1 item
- oregano - 1/2 tsp
- onion, minced - 3 Tbsp
- bell pepper, chopped - 1/4 c
- Salt and pepper to taste - 1 item
- small garlic clove, minced - 1 item
- Croutons - 1 item
- corn kernels - 1 c
- Parsley, minced - 1 item
- big tomatoes, peeled & chopped - 2 item
How to make corn and tomato bisque:
In soup pot cook onion, bell pepper and garlic in butter until soft. Add milk, tomatoes, herbs, salt and pepper. Cover and bring to gentle boil, lower heat and simmer 1 minute. Discard bay leaf. Add corn kernels, reheat and season with salt to taste. Garnish with parsley and pass the croutons.Recipe categories: Lunch/snacks, Main dish, Bisques/cream soups.
