Butternut squash soup
Ingredients/Components
- chicken broth - 2 c
- bay leaf - 1 item
- oregano - 1 tsp
- small onion, chopped - 1 item
- cumin - 1 tsp
- Salt and pepper to taste - 1 item
- butternut squash, cooked, peeled and cubed - 1 medium
- medium sized potato, cooked, peeled and cubed - 1 item
- 2-3 cloves of garlic, minced
- coarsely chopped turkey kielbasa sausage, optional - 1/2 lb
How to make butternut squash soup:
Coat a large saucepan with cooking spray. Saut?© garlic and onion until soft. Add remaining ingredients, and bring to a boil. Using a potato masher, mash squash and potato until soup is very thick. Add more liquid as desired and simmer for 20 minutes. If desired, add coarsely chopped turkey kielbasa sausage while simmering.
