  • butter, softened - 1/2 c
  • packed brown sugar
  • plus 2 Tbsp - 1 c
  • eggs - 2 item
  • salt - 1/2 tsp
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • flaked coconut - 1 c

How to make coconut-pecan bars:

Cream butter and 1/2 cup brown sugar until fluffy. Gradually stir in 1 cup flour until well blended. Pat evenly in a greased 9 x 9-inch pan. Prebake in a preheated 350° oven for 12 minutes or until firm to touch. Remove from oven. Meanwhile beat eggs until light colored and add remaining 1 cup brown sugar, salt and vanilla; beat until well blended. Fold in remaining 2 tablespoons flour, pecans and coconut. Spread over crust and bake 20 to 25 minutes or until light brown. Cool completely and cut into thirty-two 2 x 1-inch bars.
