Coconut-pecan bars
Ingredients/Components
- butter, softened - 1/2 c
- packed brown sugar
- plus 2 Tbsp - 1 c
- eggs - 2 item
- salt - 1/2 tsp
- vanilla - 1 tsp
- chopped pecans - 1 c
- flaked coconut - 1 c
How to make coconut-pecan bars:
Cream butter and 1/2 cup brown sugar until fluffy. Gradually stir in 1 cup flour until well blended. Pat evenly in a greased 9 x 9-inch pan. Prebake in a preheated 350° oven for 12 minutes or until firm to touch. Remove from oven. Meanwhile beat eggs until light colored and add remaining 1 cup brown sugar, salt and vanilla; beat until well blended. Fold in remaining 2 tablespoons flour, pecans and coconut. Spread over crust and bake 20 to 25 minutes or until light brown. Cool completely and cut into thirty-two 2 x 1-inch bars.Recipe categories: Desserts, Cookie and brownie, Bar cookie.
