Cinnamon coffee cake
Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 2 item
- butter or margarine - 1 c
- salt - 1/2 tsp
- soda - 1 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- chopped walnuts - 1/2 c
- sifted flour - 3 c
- hot water - 1 Tbsp
How to make cinnamon coffee cake:
Sift together flour, sugar, baking powder and salt into a large mixing bowl. Add butter and cut with pastry blender until mixture has crumb-like texture. Remove 1/2 cup of mixture and set aside. Add eggs, 1 at a time, to remaining flour mixture, blending well after each addition. Dissolve soda in hot water, then stir into buttermilk. Stir buttermilk into flour mixture, mixing until smooth.Pour 1/3 of batter into a greased 9-inch tube pan and spread evenly over bottom of pan. Add nuts, 1 tablespoon sugar and cinnamon to reserved flour mixture and sprinkle 1/3 over batter. Repeat twice with remaining batter and filling, ending with filling. Bake at 350° for 45 to 50 minutes. Glaze with confectioners sugar, if wanted, using 1 cup sugar.
