Banana nut muffins
Ingredients/Components
- sugar - 1/2 c
- milk - 1/2 c
- salt - 1/2 tsp
- chopped nuts - 1/3 c
- soda - 1/4 tsp
- baking powder
- sifted flour - 1 c
- oatmeal - 3/4 c
- egg, beaten - 1 item
- oil or melted shortening - 3 Tbsp
- well mashed banana - 1/2 c
How to make banana nut muffins:
Sift flour, sugar, baking powder, salt and soda into bowl. Stir in oatmeal. Add egg, oil, milk, banana and nuts, stirring only until dry ingredients are moistened.Fill muffin cups 2/3 full. Bake at 400° for 20 minutes or until done. Makes 12 medium-sized muffins.
