• oil or melted shortening - 1/4 c
• self-rising cornmeal mix - 2 c

How to make southern cornbread muffins:

Preheat oven to 425°. Blend all ingredients. Fill greased muffin cups 2/3 full. Bake at 425° for 20 to 25 minutes. Makes about 16 muffins.
