Ingredients/Components

  • salt - 1 tsp
  • water - 1 c
  • vegetable oil - 2 Tbsp
  • cloves garlic, minced - 2 item
  • chili powder - 3 Tbsp
  • shredded Cheddar cheese - 6 Tbsp
  • tomato paste - 6 oz
  • coarsely chopped onion - 1 c
  • chopped green bell pepper - 1 c
  • can kidney beans - 1 item
  • oregano leaves - 1 tsp
  • crushed red pepper pods - 1/2 tsp
  • lean boneless chuck, cut into 3/4-inch pieces or 3 lb
  • green onion, cut - 6 Tbsp

How to make chili:

Brown beef with onion and garlic in oil in large frying pan. Drain. Season with salt. Add tomatoes, tomato paste, chili powder, oregano, crushed red pepper and water. Cover tightly and simmer for 1 1/2 hours in crock-pot. Add green pepper and kidney beans and continue cooking for 30 minutes. Sprinkle servings with cheese and onions, as desired. For added flavor, put corn chips on bottom of bowl before chili.
