Ingredients/Components
- Parsley - 1 tsp
- Sherry - 1/2 c
- Boneless Skinless Chicken Split Breasts - 4 item
- Flour Season flour with Salt and pepper - 1/2 c
- Lemon Slices - 4 item
How to make chicken scallopini:
1. Pound each chicken breasts to 1/4 - 1/8 thin. Dredge in flour, salt, and pepper. 2. Fry chicken in pan with some oil until cooked. 3. Add parsley, lemon slices, and sherry. Cook and stir several minutes. Serve immediately.Excellent with wild rice and buttered corn.
