Chicken scallopini
Ingredients/Components
- water - 1 beaten
- lemon juice - 2 Tbsp
- clove garlic - 1 item
- basil - 1/2 tsp
- olive oil - 1/4 c
- Italian seasoned bread crumbs - 1/2 c
- capers - 2 tsp
- sherry - 1/4 c
- whole chicken breasts, skinned, boned and halved - 2 item
How to make chicken scallopini:
Pound chicken breasts thin. Dip chicken into beaten egg, then into seasoned bread crumbs. Heat oil with garlic and remove garlic. Brown chicken in oil for 3 minutes on each side over medium heat. Add sherry, basil and lemon juice. Top with capers. Simmer 5 to 6 minutes or until tender. Makes 4 servings.Recipe categories: Chicken, Main dish, Chicken breast.
