Ingredients/Components

  • sour cream - 2 c
  • butter or margarine - 3 Tbsp
  • flour - 3 Tbsp
  • lemon juice - 3 tsp
  • mushrooms, sliced - 1 c
  • chopped parsley - 2 Tbsp
  • ground pepper - 1 item
  • grated rind of 1 lemon
  • skinless, boneless chicken breast halves - 4 item
  • scallions, chopped - 4 item

How to make chicken stroganoff casserole:

Preheat oven to 350°. Melt butter in a large pan and brown chicken breasts lightly, about 4 minutes, remove breasts from pan to a baking dish (8 x 8 x 2-inches).

Stir flour into pan. Cook 1 minute. Add sour cream and pepper. Simmer 4 minutes. Add mushrooms, parsley and scallions. Stir in lemon juice and lemon rind.

Pour sauce mixture over chicken. Cover with foil. Bake 45 minutes.
