Ingredients/Components

  • milk - 1 c
  • salt - 1 tsp
  • flour - 3 Tbsp
  • butter - 1/4 c
  • water - 1 c
  • pepper - 1/4 tsp
  • chicken broth
  • chopped onions - 1 c
  • sliced carrots - 1 c
  • sliced celery - 1 c
  • thyme - 1/4 tsp
  • frozen peas, thawed - 1 pkg
  • sliced mushrooms optional - 2 c
  • chopped chicken - 3 c

How to make chicken pot pie:

Preheat oven to 425°. Melt butter. Add onions and celery; cook until soft. Add mushrooms; cook 3 minutes. Stir in flour; cook 1 minute. Stir in chicken broth and milk; cook until thickened. Add peas and seasoning; set aside. Cook carrots in 1 cup water for 5 minutes. Drain and add with chicken to sauce. Spoon into a 12 x 9-inch baking dish. Top with "Corn Bread Crust" (recipe in book).
