Chicken enchiladas
Ingredients/Components
- flour - 1 Tbsp
- water - 3/4 c
- vegetable oil - 1 Tbsp
- vinegar - 1 Tbsp
- garlic powder - 1/4 tsp
- can tomato sauce - 1 oz
- 6 oz
- can chopped green chilies - 1 1/2
- red pepper - 1/4 tsp
- cumin - 1/4 tsp
- 10 oz - 2 c
- flour tortillas - 8 item
- oregano, crumbled - 1/2 tsp
How to make chicken enchiladas:
Preheat oven to 350°. Blend first 10 ingredients in saucepan until smooth; bring to a boil, stirring constantly. Reduce heat; simmer 2 minutes. Place 1/4 cup chicken, 2 tablespoons of cheese and 1 tablespoon of sauce on each tortilla. Roll up and place seam side down in a greased 9 x 12-inch baking dish. Spread remaining sauce over enchiladas. Top with cheese. Bake, covered, 20 minutes. Makes 4 servings.Recipe categories: Chicken, Main dish, Poultry.
