Chicken creole
Ingredients/Components
- salt - 1/4 tsp
- chili powder - 1/4 tsp
- green pepper, chopped - 1 item
- crushed red pepper - 1/4 tsp
- rice - 1 item
- cloves minced garlic - 2 item
- diced tomatoes - 1 cup
- cup onion, chopped - 1/4 item
- boneless chicken breast cut into 1 inch strips - 4 item
- 1/2 cup celery, chopped - 1 item
- fresh basil, or 1 tsp - 1 Tbsp
- fresh parsley, or 1 tsp - 1 Tbsp
How to make chicken creole:
Spray skillet with non stick coating. Preheat pan over high heat. Cook chicken in hot skillet for 3 - 5 minutes, or until no longer pink. Reduce heat. Add tomatoes and their juice. Add celery, onion, garlic, basil, parsley, green peppers, chili powder, crushed red pepper, and salt. Bring to a boil. Reduce heat and simmer, covered, for 10 minutes. Serve over hot white rice.
