  • cloves garlic, minced - 3 item
  • bay leaf - 1 item
  • cup thinly sliced onion - 1 item
  • vegetable cooking spray - 1 item
  • crushed red pepper flakes - 1/4 1/2
  • cup diced green pepper - 1 item
  • cups hot cooked rice - 2 item
  • cups sliced fresh mushrooms - 2 item
  • cup celery with leaves - 1 item
  • cups diced uncooked chicken - 2 item
  • can no-salt added tomatoes - 1 1/2
  • cup chablis or other dry white wine - 1/2 item
  • tbsp chopped parsley - 2 item

How to make chicken creole:

Coat a large non-stick skillet with cooking spray, place over medium high heat until hot. Add onion and next 3 ingredients, saut?© until crisp about 3 minutes, stirring occasionally. Add chicken and next 5 ingredients. Cook 25 minutes. Serve over rice, sprinkle with parsley. Yields 4 servings.
