Ingredients/Components

  • sugar - 2 Tbsp
  • salt - 1 tsp
  • flour - 2 Tbsp
  • oleo - 2/3 c
  • chopped celery - 1 c
  • chicken broth - 1 c
  • chopped green pepper - 1 item
  • cans tomato sauce - 2 oz
  • chicken - 1 (3
  • cloves minced garlic - 4 item
  • bay leaves - 4 item
  • thyme - 1 tsp
  • fresh chopped parsley - 1 c
  • cayenne pepper to taste - 1 item
  • chopped onion large - 1 item

How to make chicken creole:

Cook chicken with bay leaves. Remove bay leaves; debone and chop the chicken. Combine vegetables, half the oleo, tomato sauce and seasonings; simmer until vegetables are tender. Add the chopped chicken. Melt the remaining oleo in a skillet; blend in the flour and cook until brown. Add 1 cup broth, stirring until thickened. Add to the chicken mixture and serve over rice or noodles. Serves 8 to 10.
