- sugar - 2 Tbsp
- salt - 1 tsp
- flour - 2 Tbsp
- oleo - 2/3 c
- chopped celery - 1 c
- chicken broth - 1 c
- chopped green pepper - 1 item
- cans tomato sauce - 2 oz
- chicken - 1 (3
- cloves minced garlic - 4 item
- bay leaves - 4 item
- thyme - 1 tsp
- fresh chopped parsley - 1 c
- cayenne pepper to taste - 1 item
- chopped onion large - 1 item
How to make chicken creole:
Cook chicken with bay leaves. Remove bay leaves; debone and chop the chicken. Combine vegetables, half the oleo, tomato sauce and seasonings; simmer until vegetables are tender. Add the chopped chicken. Melt the remaining oleo in a skillet; blend in the flour and cook until brown. Add 1 cup broth, stirring until thickened. Add to the chicken mixture and serve over rice or noodles. Serves 8 to 10.Recipe categories: Chicken, Main dish, Chicken breast.
