Chicken and sausage jambalaya
Ingredients/Components
- butter - 3 Tbsp
- minced garlic - 1 Tbsp
- chicken stock
- uncooked rice
- green bell peppers, chopped - 1 c
- hot sausage - 1/2 lb
- yellow onions, chopped - 1 c
- boneless, skinless chicken breast, cut into bite size pieces - 3/4 lb
- blackened Cajun seasoning - 2 Tbsp
How to make chicken and sausage jambalaya:
Melt butter in large saucepan over high heat. Add sausage. Brown 4 or 5 minutes, stirring frequently and scraping bottom of pan. Add chicken. Cook for 4 or 5 minutes or until brown. Add blackened seasoning, garlic, plus 1/2 cup each of onion and bell pepper. Cook until vegetables start to soften, about 6 to 8 minutes. Stir in rice and stock and add remainder of vegetables. Bring all to a boil and turn heat down to a slow simmer. Simmer 30 minutes. Pour in baking pan and bake at 350° for 1 hour.Recipe categories: Chicken, Whole chicken, Chicken breast.
