Ingredients/Components

  • ground - 2 leaves
  • salt - 1/2 tsp
  • sweet paprika - 1/2 tsp
  • dried basil - 1/2 tsp
  • oregano leaves - 1 tsp
  • black pepper - 1/2 tsp
  • dried thyme - 1/2 tsp
  • white pepper
  • red pepper - 1/2 tsp
  • Tabasco or red hot sauce - 1/2 tsp
  • butter
  • chopped onions - 3/4 c
  • chopped bell pepper - 3/4 c
  • chicken stock
  • chopped tomatoes - 1 c
  • chopped celery - 3/4 c
  • minced garlic
  • can tomato sauce - 1 item
  • sugar optional - 1 tsp

How to make creole sauce:

For Spicy, Add:1/2 tsp. white pepper1/2 tsp. red pepper1/2 tsp. Tabasco or red hot sauce Sauce:4 Tbsp. butter3/4 c. chopped onions3/4 c. chopped bell pepper1 1/4 c. chicken stock1 c. chopped tomatoes3/4 c. chopped celery1 1/2 tsp. minced garlic1 can tomato sauce1 tsp. sugar (optional) Thoroughly combine the seasoning mix ingredients in a small bowl and set aside. Melt the butter in a large skillet over medium heat. Stir in the tomatoes, onions, celery and bell peppers, then add the garlic and seasonings mix, stirring thoroughly. Saute until onions are transparent, about 5 minutes, stirring occasionally. Stir in the stock, tomato sauce, sugar (optional if you like it sweet) and Tabasco. Bring to boil. Reduce heat to maintain a simmer and cook until vegetables are tender and flavors are married, about 20 minutes, stirring occasionally. Remove bay leaves before serving.

This sauce is good served with chicken, rabbit, shrimp, oysters or egg dishes, such as omelettes or served with jambalaya.
