Ingredients/Components

  • sour cream - 1 c
  • salt - 1/2 tsp
  • water - 2 c
  • paprika - 1 item
  • curry powder - 1/2 tsp
  • can cream of mushroom soup - 1 item
  • can mushrooms - 1 item
  • onion - 1 c
  • chicken, cut up - 4 lb
  • brown rice - 1 c
  • almonds, sliced - 1/4 1/2
  • chicken broth or stock - 1 c

How to make chicken and rice casserole:

Combine water, sherry, onion, curry and salt. Bring to a boil. Add chicken pieces; simmer for 1 hour.

In the meantime, prepare rice using 2 1/4 cups of water; simmer 45 minutes. Let chicken cool, then tear off the bone in bite size pieces. Put back in remaining sherry mixture that the chicken cooked in. Add rice, mushrooms, mushroom soup and sour cream. Mix well. Spread into a 13 x 9 x 2-inch pan. Sprinkle with almonds and paprika. Cover. Bake at 350° for 1 hour. Freezes well.
