Chicken cacciatore

- olive oil - 1/4 c
- medium onion, chopped - 1 item
- green pepper, chopped - 1 item
- garlic clove, minced - 1 item
- mushrooms, sliced - 1/2 c
- can tomato paste - 1 oz
- hot water - 2 c
- dry red wine - 1/4 c
- bay leaf, crushed - 1 item
How to make chicken cacciatore:
Sprinkle chicken with salt and pepper. Heat oil in heavy skillet. Brown chicken on all sides. Push to side of pan; add onion, green pepper, garlic and mushrooms. Saute a few minutes. Mix tomato paste with remaining ingredients and pour over chicken; stir well. Cover and simmer gently until tender, about 30 minutes.
