Ingredients/Components

  • chopped onion - 1/2 c
  • chopped green pepper - 1/4 c
  • basil - 1/2 tsp
  • chopped parsley - 1/4 c
  • small bay leaf - 1 item
  • white wine - 1 c
  • thyme - 1/2 tsp
  • raw rice - 1 c
  • canned tomatoes, drained - 1 c
  • chicken breasts, split and skinned - 3 item
  • lean ham, cubed - 1 c
  • c bouillon - 1 item

How to make chicken jambalaya:

Preheat oven to 350°. In a saucepan, bring to a boil the bouillon, wine, herbs, onion and green pepper. Place rice, tomatoes and chicken in a large casserole; pour herb sauce over all. Cover tightly and bake for 25 or 30 minutes. Add seasoning. Turn off heat; allow to remain in the oven for 10 to 15 minutes.
