Chicken jambalaya
Ingredients/Components
- chopped onion - 1/2 c
- chopped green pepper - 1/4 c
- basil - 1/2 tsp
- chopped parsley - 1/4 c
- small bay leaf - 1 item
- white wine - 1 c
- thyme - 1/2 tsp
- raw rice - 1 c
- canned tomatoes, drained - 1 c
- chicken breasts, split and skinned - 3 item
- lean ham, cubed - 1 c
- c bouillon - 1 item
How to make chicken jambalaya:
Preheat oven to 350°. In a saucepan, bring to a boil the bouillon, wine, herbs, onion and green pepper. Place rice, tomatoes and chicken in a large casserole; pour herb sauce over all. Cover tightly and bake for 25 or 30 minutes. Add seasoning. Turn off heat; allow to remain in the oven for 10 to 15 minutes.From the American Heart Association Cookbook.
