Ingredients/Components

  • milk - 1/2 c
  • salt - 2 tsp
  • baking powder - 2 tsp
  • sifted flour
  • pepper - 1/4 tsp
  • bay leaf - 1 item
  • sprigs parsley - 2 item
  • chopped parsley - 2 Tbsp
  • Crisco, melted - 2 Tbsp
  • small onion, cut up - 1 item
  • celery ribs with leaves - 4 item
  • stewing chicken or 2 frying chickens, cut up - 1 item
  • carrot, pared and sliced optional - 1 item

How to make chicken and dumplings:

Dumplings:1 c. sifted flour2 tsp. baking powder1/2 tsp. salt1/2 c. milk2 Tbsp. Crisco, melted2 Tbsp. chopped parsley In a large kettle, add enough water to cover chicken and all of the first ingredients. Cover and bring to a boil and cook until chicken is tender. Remove the cooked chicken from the liquid and return the liquid to a boil.

Dumplings: Mix all the ingredients for the dumplings and roll to desired thickness. Cut into slices and place in the boiling liquid after the chicken has been removed. Cover with lid and do not lift it while you let it simmer for 12 to 15 minutes. If you prefer, you may drop the dumplings by tablespoon into the boiling liquid. This will boil over easily so it needs to be watched carefully.
