Chicken and dumplings
Ingredients/Components
- salt - 2 tsp
- eggs, beaten - 2 item
- shortening - 6 Tbsp
- all-purpose flour - 4 c
- chicken broth
- yellow food coloring - 1 item
- stewing hen - 1 item
How to make chicken and dumplings:
Cook chicken in pot of water. Make sure water covers chicken. Cook until tender. Remove chicken and pick meat off bones. Keep in bowl while making dumplings.Mix flour, salt, shortening and eggs together. Get chicken broth from drippings from pot of chicken. Add broth and a dash of yellow food coloring. Knead on floured pastry board. Add a little more flour if sticky and knead until smooth and light. Roll out as thin as possible. Cut strips with knife and add to hot chicken broth in pot where chicken was cooked in. Lower heat and simmer about 10 minutes. Place chicken back in pot. May add a couple teaspoons of flour to thicken broth.
