Ingredients/Components

  • butter - 4 Tbsp
  • vegetable oil - 1 Tbsp
  • salt and pepper to taste - 1 item
  • shallots, finely chopped - 1/2 c
  • juice of 1 lemon
  • thyme - 1 tsp
  • parsley, finely chopped - 2 Tbsp
  • flour mixed with 1 tsp - 1 tsp
  • champagne - 1/2 c
  • green grapes, sliced optional - 1 c
  • fresh mushrooms, thinly sliced - 2 c
  • whole chicken breasts, boned, skinned and cut in half - 3 item
  • chicken broth, double strength - 1/2 c

How to make champagne chicken:

Sprinkle chicken with lemon juice and thyme and let marinate for 5 minutes. Then season with salt and pepper.

In a heavy saute pan, heat the butter and oil and brown the chicken breasts on both sides. Remove from pan and put aside. Add the shallots and mushrooms and saute for about 4 minutes, stirring constantly, then add the champagne and chicken broth, simmer this sauce for 10 minutes. Return chicken breast to the pan and bring to a boil, simmer for 5 minutes. Add parsley and thicken the sauce with flour and butter mixture. Then serve with grapes.
